Oat Flour Pancakes Yum-Yum

 This is what we had for breakfast this lovely Thanksgiving morning. Oat flour Pancakes with fresh fruits and homemade strawberry syrup, Yum-Yum.


Here is what the pan cakes  look like right before they need to be turned over.




 1 cup Oat flour
1 cup wheat flour
4 teaspoons baking powder
2 tablespoon honey
2 cups almond or rice milk
1 fresh squeezed lemon
2 tablespoons olive oil or coconut oil
2 eggs
2 teaspoon vanilla extract

To make the oat flour, grind regular oatmeal in a blender (or I like to use a coffee bean grinder, it works wonderfully). In a bowl put all wet ingredients and stir, let sit for about 2 to 3 minutes, add the dry ingredients  and whisk lightly until smooth. On medium heat, in a pan sprayed with olive or coconut oil, pour the desired amount of batter; cook until bubbles form, flip over, and cook until golden brown. Serve.
