My family absolutely loves this wonderful easy to make potato soup recipe and I'd like to share with you.
1 pound ground turkey
1 medium onion, chopped
10 to 12 medium potatoes,peeled and cubed
3 cups water
1 1/2 teaspoon sea salt
1/2 teaspoon pepper
2 cups almond milk( you can also use regular milk)
1 cup of corn fresh or frozen
2 teaspoons dried parsley or 1 tablespoon fresh parsley minced
1 cup sour cream (optional)
In a large pot ( I use my cast iron pot) cook turkey and onions until no longer pink;drain. Add the potatoes, water, salt and pepper; bring to a boil. Reduce heat; cover and simmer for 20 minutes or until potatoes are tender. Stir in milk, corn and parsley; cook for 5 minutes or until heated through. Add a small amount of hot soup to sour cream. Gradually return all to the pot, stirring constantly. Heat through but do not boil.
