Wedding Soup a la Gabriele

On this cool day I decided to make this yummy soup.

For  the meatball mixture you need:  1 pound ground turkey
 1/2 cup dry bread crumbs
 1 egg
 1 teaspoon sea salt
 1 small onion,  chopped ( use 1 teaspoon dry organic onion powder because two of my children don't like onions).
1/4 teaspoon thyme
3/4 cup grated Parmesan cheese
Mix together and form the meatballs into the size you desire. Place on a  baking sheet and bake in the oven for 5 to 15 minutes on 250 degrees .

In a large pot combine 2 quarts of chicken broth, 1/3 cup of fresh chopped spinach, 3 tablespoon chopped fresh parsley ( or 1 tablespoon dry parsley ), 1 garlic clove chopped, 1 teaspoon sea salt, 1/2 teaspoon fresh ground black pepper, and 1 teaspoon onion powder. Bring to a boil, add the meatballs and simmer for 15 minutes.




This is what the meatballs look like just before adding to the soup.

Now they need to simmer for 15 minutes.
Add cooked noodles of your choice and enjoy this yummy soup.
